Ingredients

For Puris (ready-made or homemade)
- 24 small puris
For Spicy Pani (water)
- 1 cup mint leaves
- ½ cup coriander leaves
- 2 green chilies
- 1 inch ginger
- Juice of 1 lemon
- 2 tbsp Zest Pani Puri Masala
- ½ tsp Zest Black Salt
- ½ tsp Zest Cumin Powder
- 4 cups chilled water
For Filling
- 2 medium potatoes, boiled and mashed
- ½ cup boiled chickpeas or sprouts
- 1 tsp Zest Red Chili Powder
- ½ tsp Zest Turmeric Powder
- 1 tsp Zest Chaat Masala
- Salt to taste
Method
- Pani preparation: Blend mint, coriander, chilies, ginger, and lemon juice into a smooth paste. Mix with 4 cups chilled water. Add Zest Pani Puri Masala, Zest Black Salt, and Zest Cumin Powder. Chill until serving.
- Filling: Mix mashed potatoes, chickpeas, Zest Red Chili Powder, Zest Turmeric Powder, and Zest Chaat Masala. Adjust salt.
- Assemble: Crack open puris gently. Fill with potato-chickpea mix. Dip into spiced water and serve immediately.
Notes / Tips
- Keep pani chilled for refreshing flavour.
- Add boondi to pani for crunch.
- Use sprouts instead of potatoes for a healthier variation.
