- 24 small puris (store-bought or homemade)
For Filling
- 2 medium potatoes, boiled and mashed
- ½ cup boiled chickpeas or sprouts
- 1 tsp Zest Chaat Masala
- ½ tsp Zest Red Chili Powder
- ½ tsp Zest Turmeric Powder
- Salt to taste
For Toppings
- 1 cup yogurt, whisked with a pinch of salt and sugar
- Tamarind chutney (sweet-sour)
- Green chutney (spicy-mint)
- ½ cup sev (crispy chickpea noodles)
- ½ cup chopped onions
- ½ cup chopped tomatoes
- ½ cup fresh coriander, chopped
- ½ tsp Zest Cumin Powder
- ½ tsp Zest Black Salt
Method
- Prepare filling: Mix mashed potatoes, chickpeas, Zest Chaat Masala, Zest Red Chili Powder, and Zest Turmeric Powder. Adjust salt.
- Assemble puris: Crack puris gently. Fill with potato-chickpea mix.
- Add toppings: Spoon yogurt, drizzle tamarind and green chutney. Sprinkle onions, tomatoes, sev, and coriander.
- Final touch: Dust with Zest Cumin Powder and Zest Black Salt.
- Serve immediately before puris turn soggy.
Notes / Tips
- Use chilled yogurt for freshness.
- Adjust chutneys for sweet or spicy preference.
- For extra flavour, sprinkle a pinch of Zest Garam Masala on top.
