Ingredients
- 4 pav buns
- 2 medium potatoes, boiled and mashed
- 1 cup mixed vegetables (carrot, peas, capsicum, cauliflower), boiled and mashed
- 2 medium onions, finely chopped
- 2 medium tomatoes, finely chopped
- 1 green capsicum, finely chopped
- 2 green chilies, chopped
- 1 tbsp ginger-garlic paste
- 3 tbsp butter
- 2 tbsp oil
- 2 tbsp Zest Pav Bhaji Masala
- 1 tsp Zest red chili powder
- ½ tsp Zest turmeric powder
- Salt to taste
- 1 tbsp lemon juice
- Fresh coriander, chopped
Method
- Heat oil + butter. Sauté onions golden. Add ginger-garlic, chilies, capsicum.
- Add tomatoes. Cook soft. Add chili powder, turmeric, Zest Pav Bhaji Masala.
- Add potatoes and vegetables. Mash while cooking. Add water to adjust. Simmer 10–12 minutes.
- Add lemon juice and butter. Adjust salt. Garnish.
- Toast pav with butter.
- Serve hot bhaji with pav, onion, and lemon.
Notes / Tips
- Add 1 tsp Zest Kashmiri Chili Powder for a brighter red colour.
- Toast pav generously with butter for authentic street-style taste.
- Garnish bhaji with a cube of butter before serving.
