Ingredients
- 1 cup toor dal, boiled until soft
- 2 tbsp Zest Sambhar Masala
- 1 tsp Zest red chili powder (extra heat)
- 1 medium onion, chopped
- 1 tomato, chopped
- 1 bottle gourd, cubed
- 1 brinjal, diced
- 2 green chilies, slit
- ½ tsp Zest turmeric powder
- 1½ tbsp tamarind pulp (more tangy)
- 2 tbsp oil
- Salt to taste
Tempering
- 1 tbsp oil or ghee
- 1 tsp mustard seeds
- 2 dried red chilies
- 12 curry leaves
- Pinch of Zest asafoetida
Method
- Cook dal with turmeric until soft. Mash.
- Heat oil. Add onions, tomatoes, chilies, and vegetables. Sauté until tender.
- Add tamarind pulp, chili powder, salt, and Zest Sambhar Masala. Stir. Add water and simmer 12 minutes.
- Add dal. Simmer 5–6 minutes for thick texture.
- Temper with oil, mustard, red chilies, curry leaves, and asafoetida.
- Serve hot with rice.
Notes / Tips
- Add more Zest Red Chili Powder for fiery heat.
- Tamarind quantity can be increased for stronger tang.
- Serve with hot steamed rice and pickle.
