Ingredients
- 1 cup toor dal (pigeon peas), boiled until soft
- 2 tbsp Zest Sambhar Masala
- 1 medium onion, sliced
- 1 medium tomato, chopped
- 1 drumstick (vegetable), cut into pieces
- 1 carrot, diced
- 1 brinjal, diced
- 2 green chilies, slit
- ½ tsp Zest turmeric powder
- 1 tbsp tamarind pulp
- 2 tbsp oil
- Salt to taste
Tempering
- 1 tbsp ghee or oil
- 1 tsp mustard seeds
- 2 dried red chilies
- 12 curry leaves
- Pinch of asafoetida
Method
- Cook dal with turmeric until soft. Mash well.
- Heat oil in a pot. Sauté onions, tomatoes, chilies, and vegetables for 3–4 minutes.
- Add tamarind pulp, salt, and Zest Sambhar Masala. Stir well. Add water for sambhar consistency. Simmer 10–12 minutes.
- Add mashed dal, mix, and simmer 5–6 minutes.
- Heat ghee for tempering. Add mustard, chilies, curry leaves, asafoetida. Pour over sambhar.
- Serve hot with idli, dosa, or rice.
Notes / Tips
- Add extra tamarind for sharper tang.
- Fry 1 tsp Zest Coriander Powder in tempering for stronger aroma.
- Best enjoyed with idli, dosa, or plain rice.
